ReplyDeleteMy favorite recipe to make at home is sausage and brown rice. It is so easy to make. I just brown a pound of Jimmy Dean sage sausage with some diced onion and celery. I add a lot of basil--fresh is better, but dried is okay. Add 2 cups of instant brown rice and brown just a tad bit. Then add cracked black pepper and a tiny bit of salt. Add 1 3/4 cups of water, bring to a boil, and then simmer 5 minutes with the lid on. Turn it all off and let set a couple of minutes. It tastes great. This serves 4.
ReplyDeleteSometimes I add a handful of cranberries, nuts, and frozen spinach for color and taste. This is more for the holiday season, but I'll do it year round as well.
Great side dish for your barbecue. It can be eaten hot or cold.

a favorite recipe we make at home: bbq pie! it is awesome! we take refrigerated pie crust and place it (unrolled and flat) on a buttered (or sprayed) piece of foil (large enough to completely cover pie...top and bottom) then put any kind of pie filling on the pie crust (our favorite is apple), add cubes of butter, then place another pie crust on top and seal the edges all around. wrap the foil over the top of pie and place on the bbq grill (with a very small fire under, or even coals that are still hot, but not flaming) for a few minutes (til the pie crust is browned)

From Country Bob's website I have made their Lamb Kabobs:
ReplyDeleteBBQ Lamb Kabobs
Ingredients: 3 pounds lamb, trimmed of excess fat
1/2 cup red cooking wine
1/4 cup water
1/4 cup canola oil or vegetable oil
1 Tbsp lemon juice
1/4 cup Country Bob's All Purpose Sauce (or may substitute Spicy Hot)
1 tsp dry mustard
1/2 tsp paprika
1/2 tsp garlic (granular or powder)
2 tsp granular onion
12 drops hot sauce
Directions: Cube lamb into 1 to 1 1/4 inch pieces. Mix all remaining ingredients with lamb. Marinate for 2 hours at room temperature or overnight in refrigerator. Drain and reserve marinade. Skewer meat pieces. Grill over medium hot fire. Turn and baste with marinade every 3 to 4 minutes until done to your own preference. Serves 8.

ReplyDeleteA recipe I make is so good is I cook chicken on the cooktop in BBQ sauce. When cooked through I shred the chicken. Then I add the shredded chicken to the middle of a biscuit and topped with grilled onions and cheese and bake it in the oven. SOOO good. I call it BBQ chicken in a biscuit.
